Preparation:
• 2 goat cheeses (fresh or medium dry according to preference)
• 4 tomatoes
• 2 shallots
• 1 bunch chives
• Olijfolie
• Essential oil herbes de provence
• Mixed green salad (arugula, corn salad, little gem salad, curly endive, ...)
• Some slices of toasted bread
• Pepper from the mill
• Fleur de sel
Cut the cheeses into small cubes and put them in a salad bowl.
Dip the tomatoes briefly in hot water and peel them.
Remove the seeds and cut them into small pieces.
Add them to the cheese cubes.
Pour olive oil in a separate bowl and aromatize the oil with 1 dose essential oil herbes de provence.
Pour the oil over mixture cheese – tomatoes and mix gently.
Cut the shallots into fine rings and chop the chives. Sprinkle these over the cheese and tomatoes.
Add pepper from the mill and fleur de sel to own taste.
Decorate with some fresh small branches of provencal herbs such as thyme, rosemary, basil, oregano, ...
Serve with a fresh mixed green salad.
Delicious with a few slices of toasted bread.
